Ingredients
  

  • 2 cups romaine lettuce chopped
  • 1 cup tomatoes dice
  • 1 cup cucumber chopped
  • ½ cup radishes sliced
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh parsley chopped
  • 2 tbsp fresh mint chopped (optional)
  • 1 large pita bread torn into pieces
  • 1 tbsp olive oil
  • Pinch of salt
  • Dressing
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp sumac
  • ½ tsp salt
  • Black pepper to taste

Cooking Instructions
 

  1. Preheat oven to 375°F (190°C).
  2. Toss pita pieces with olive oil and a pinch of salt.
  3. Bake for 8-10 minutes until crisp and golden. Let cool.
  4. In a large bowl, combine lettuce, tomatoes, cucumber, radishes, onion, parsley, and mint.
  5. In a small bowl, whisk together olive oil, lemon juice, sumac, salt, and black pepper.
  6. Pour dressing over salad and toss gently.
  7. Add crispy pita just before serving and toss lightly again.
  8. Serve immediately.
