- Toss pita pieces with olive oil and a pinch of salt.
- Bake for 8-10 minutes until crisp and golden. Let cool.
- In a large bowl, combine lettuce, tomatoes, cucumber, radishes, onion, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, sumac, salt, and black pepper.
- Pour dressing over salad and toss gently.
- Add crispy pita just before serving and toss lightly again.
