Ingredients
  

  • 2 tbsp olive oil or butter
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium head cauliflower cut into florets
  • 4 cups vegetable broth
  • ½ cup milk or plant-based milk
  • Salt to taste
  • Black pepper to taste

Cooking Instructions
 

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add onion and cook for 4-5 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add cauliflower florets and stir to coat.
  5. Pour in vegetable broth and bring to a gentle boil.
  6. Reduce heat, cover, and simmer for 20-25 minutes, until cauliflower is very tender.
  7. Remove from heat and blend until smooth using an immersion blender or blender.
  8. Stir in milk and season with salt and black pepper.
  9. Warm gently and serve.
