Ingredients
  

  • 8 slices whole-grain or sourdough bread
  • 1 cup roasted vegetables zucchini, bell peppers, onions, mushrooms
  • 1 cup fresh spinach or arugula
  • 1 tomato sliced
  • ½ cup hummus or cream cheese
  • 1 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Cooking Instructions
 

  1. Lightly toast bread if desired.
  2. Spread hummus or cream cheese evenly on one side of each slice.
  3. Layer roasted vegetables, greens, and tomato on four slices of bread.
  4. Season lightly with salt and black pepper.
  5. Top with remaining bread slices and press gently.
  6. Slice in half and serve immediately.
