Ingredients
  

  • 12 oz macaroni or short pasta
  • 3 cups cauliflower florets
  • 2 tbsp butter or olive oil
  • 2 tbsp all-purpose flour
  • cups milk or plant-based milk
  • 2 cups shredded cheddar cheese
  • ½ cup shredded mozzarella optional
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt to taste
  • Black pepper to taste

Cooking Instructions
 

  1. Bring a large pot of salted water to a boil.
  2. Add pasta and cook according to package instructions.
  3. During the last 3 minutes of cooking, add cauliflower florets to the same pot.
  4. Drain pasta and cauliflower together and set aside.
  5. In a saucepan, melt butter over medium heat.
  6. Whisk in flour and cook for 1 minute.
  7. Slowly whisk in milk, stirring constantly until smooth.
  8. Simmer for 4-5 minutes until sauce thickens.
  9. Reduce heat and stir in cheddar and mozzarella until melted.
  10. Season with garlic powder, paprika, salt, and pepper.
  11. Add pasta and cauliflower to the cheese sauce and stir gently to coat.
  12. Serve warm.
