- Bring a large pot of salted water to a boil.
- Add pasta and cook according to package instructions.
- During the last 3 minutes of cooking, add cauliflower florets to the same pot.
- Drain pasta and cauliflower together and set aside.
- In a saucepan, melt butter over medium heat.
- Whisk in flour and cook for 1 minute.
- Slowly whisk in milk, stirring constantly until smooth.
- Simmer for 4-5 minutes until sauce thickens.
- Reduce heat and stir in cheddar and mozzarella until melted.
- Season with garlic powder, paprika, salt, and pepper.
- Add pasta and cauliflower to the cheese sauce and stir gently to coat.
- Serve warm.
