- Heat 1 tbsp butter or oil in a pan over medium heat.
- Lightly sauté paneer cubes until lightly golden. Remove and set aside.
- In the same pan, add butter and olive oil.
- Add onion and cook for 5–6 minutes until soft and lightly golden.
- Add garlic and ginger; cook for 30 seconds until fragrant.
- Stir in tomato purée and tomato paste. Cook for 8–10 minutes until thick and glossy.
- Add chili powder, garam masala, cumin, coriander, sugar, and salt. Stir well.
- Pour in cream and a little water to loosen the sauce if needed.
- Add paneer back to the pan and simmer gently for 5 minutes.
- Taste and adjust seasoning. Serve warm.
