  1. Soak dried chickpeas in plenty of water for 8-12 hours. Drain well.
  2. Add chickpeas, onion, garlic, herbs, and spices to a food processor.
  3. Pulse until finely chopped but not puréed.
  4. Transfer mixture to a bowl and stir in flour and baking powder.
  5. Chill mixture for 15–20 minutes to help it hold together.
  6. Shape into small balls or patties.
  7. Heat oil in a skillet over medium heat.
  8. Fry falafel for 3-4 minutes per side until golden and crisp.
  9. Drain on paper towels and serve warm.

Notes

For baking: bake at 400°F (205°C) for 20-25 minutes, flipping halfway
For air fryer: cook at 375°F (190°C) for 12-15 minutes
