- Soak dried chickpeas in plenty of water for 8-12 hours. Drain well.
- Add chickpeas, onion, garlic, herbs, and spices to a food processor.
- Pulse until finely chopped but not puréed.
- Transfer mixture to a bowl and stir in flour and baking powder.
- Chill mixture for 15–20 minutes to help it hold together.
- Shape into small balls or patties.
- Heat oil in a skillet over medium heat.
- Fry falafel for 3-4 minutes per side until golden and crisp.
- Drain on paper towels and serve warm.
