Cooking Instructions
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
  3. Stir in garlic and cook for 30 seconds.
  4. Add chopped cabbage and cook for 3–4 minutes until slightly wilted.
  5. Pour in diced tomatoes and vegetable broth.
  6. Add paprika, thyme, bay leaf, salt, and pepper.
  7. Bring to a gentle boil, then reduce heat to low.
  8. Cover and simmer for 30–35 minutes, until vegetables are tender.
  9. Remove bay leaf, taste, and adjust seasoning before serving.
