Mashed Potatoes

Mashed potatoes are comfort in its purest form. Soft, warm, and familiar, they show up when people need grounding food — the kind that slows things down and brings everyone to the table. They’re not flashy, and they don’t need to be.

This dish has lasted because it’s dependable. Potatoes store well, cook simply, and respond beautifully to gentle handling. Whether mashed smooth or left a little rustic, they carry flavor quietly and generously.

In the Let’s Veg lifestyle, mashed potatoes represent reassurance. Eating well doesn’t always mean eating differently. Sometimes it means honoring the foods that have always made us feel cared for vegetables prepared with patience and intention.
