  • 1 large head cauliflower cut into florets
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • 3/4 cup breadcrumbs or panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons melted butter
  • 1 tablespoon fresh parsley chopped

Cooking Instructions
 

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Bring a large pot of water to a boil and cook the cauliflower for 5–6 minutes until slightly tender but still firm. Drain thoroughly.
  3. Melt 2 tablespoons butter in a saucepan over medium heat. Add the garlic and cook for about 30 seconds.
  4. Stir in the flour and cook for 1 minute, stirring constantly.
  5. Gradually whisk in the milk and cook for 3-5 minutes until the sauce begins to thicken.
  6. Reduce the heat and stir in the cheddar, Parmesan, paprika, onion powder, salt, and black pepper until the cheese is melted and the sauce is smooth.
  7. Arrange the cauliflower in the prepared baking dish and pour the cheese sauce evenly over the top.
  8. Combine the breadcrumbs, Parmesan, melted butter, and parsley in a small bowl. Sprinkle evenly over the cauliflower.
  9. Bake for 25-30 minutes until bubbling around the edges and golden and crispy on top.
  10. Let the cauliflower bake rest for 5 minutes before serving.

Notes

Cook the cauliflower only until slightly tender before baking so it doesn't become too soft in the oven.
