Cooking Instructions
 

  1. Bring a large pot of salted water to a boil and cook the penne according to package directions until al dente.
  2. Reserve 1/2 cup of the pasta water, then drain the pasta.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Add the sliced mushrooms and cook for 5-7 minutes until tender and lightly browned.
  5. Add the garlic, Italian seasoning, and red pepper flakes if using. Cook for about 30 seconds until fragrant.

Notes

Cremini mushrooms provide a deeper flavor, but white button mushrooms work well too.
