  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup milk
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt

Cooking Instructions
 

  1. Preheat the oven to 375°F (190°C) and lightly grease an 8×8-inch or similar baking dish.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the onion and cook for 3-4 minutes until softened.
  4. Stir in the garlic and chopped kale and cook for another 3-4 minutes until the kale begins to wilt.
  5. In a large bowl, whisk together the eggs, milk, paprika, oregano, salt, and black pepper.
  6. Stir the cooked kale and onion mixture into the eggs.
  7. Fold in half of the cheddar and mozzarella cheese.
  8. Pour the mixture into the prepared baking dish and sprinkle the remaining cheese evenly over the top.
  9. Bake for 25-30 minutes until the eggs are set and the cheese is melted and lightly golden.
  10. Let the casserole rest for 5 minutes, garnish with fresh parsley or chives, slice, and serve warm.
