  • 4 tablespoons sun-dried tomato spread
  • 4 slices mozzarella or provolone cheese
  • 1 medium tomato thinly sliced
  • 1 cup fresh arugula
  • 1 tablespoon olive oil
  • 1/4 teaspoon dried Italian seasoning
  • Salt to taste
  • Black pepper to taste

Cooking Instructions
 

  1. Preheat a panini press or grill pan over medium heat.
  2. Spread the sun-dried tomato mixture generously over the inside of each bread slice.
  3. Place the cheese over two slices of bread.
  4. Arrange the fresh tomato slices over the cheese.
  5. Season lightly with salt, black pepper, and Italian seasoning.
  6. Add the fresh arugula.
  7. Close the sandwiches with the remaining bread slices.
  8. Lightly brush the outside of the bread with olive oil.
  9. Grill for 5-8 minutes until the bread is crisp and golden and the cheese has melted.
  10. Let rest for 1 minute, slice in half, and serve warm.
