- Preheat a panini press or grill pan over medium heat.
- Spread the sun-dried tomato mixture generously over the inside of each bread slice.
- Place the cheese over two slices of bread.
- Arrange the fresh tomato slices over the cheese.
- Season lightly with salt, black pepper, and Italian seasoning.
- Add the fresh arugula.
- Close the sandwiches with the remaining bread slices.
- Lightly brush the outside of the bread with olive oil.
- Grill for 5-8 minutes until the bread is crisp and golden and the cheese has melted.
- Let rest for 1 minute, slice in half, and serve warm.
