Potato Latkes

Latkes are proof that the simplest vegetables can carry the most meaning. Grated potatoes, a little onion, and heat come together to create something crisp on the outside and tender inside. They’re humble, affordable, and deeply satisfying food that feels celebratory without being complicated.

Across generations, latkes have been cooked in small kitchens and shared at crowded tables. They’re often tied to tradition, but at their heart, they’re about making the most of what you have. Potatoes store well, onions add depth, and a hot pan does the rest.

In the Let’s Veg lifestyle, latkes represent comfort without apology. Vegetables don’t need to be hidden or rebranded to be loved. Sometimes, they just need to be grated, seasoned, and cooked until golden. It’s progress, not perfection and joy counts too.
