Cooking Instructions
 

  1. Cook the gnocchi according to the package directions until they float to the surface. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the diced eggplant and cook for 8–10 minutes until golden and tender.
  4. Stir in the onion and cook for 3-4 minutes until softened.

  6. Stir in the diced tomatoes, tomato paste, crushed red pepper flakes, Italian seasoning, smoked paprika, salt, and black pepper.
  7. Simmer the sauce for 10 minutes, stirring occasionally, until slightly thickened.
  8. Add the cooked gnocchi and gently toss until evenly coated with the spicy sauce.
  9. Cook for another 2-3 minutes until everything is heated through.
  10. Garnish with fresh basil and Parmesan cheese, if desired, and serve immediately.
