  • 4 cups romaine lettuce chopped
  • 2 tomatoes chopped
  • 1 cucumber diced
  • 1/2 red onion thinly sliced
  • 1 green bell pepper chopped
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh mint chopped
  • 2 pita breads toasted and broken into pieces
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon sumac
  • Salt to taste
  • Black pepper to taste

Cooking Instructions
 

  1. Toast or bake the pita bread until crisp and golden.
  2. Break the pita into bite-sized pieces and set aside.
  3. Place lettuce, tomatoes, cucumber, onion, and bell pepper in a large bowl.
  4. Add parsley and mint.
  5. In a small bowl, whisk together olive oil, lemon juice, sumac, salt, and black pepper.
  6. Pour the dressing over the vegetables.
  7. Toss gently to combine.
  8. Add the toasted pita pieces just before serving.
  9. Toss lightly again to coat the bread with dressing.
  10. Serve immediately.
