  • 1 cup white rice
  • 4 cups fresh spinach chopped
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley chopped

Cooking Instructions
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add rice and stir for 2 minutes.
  5. Pour in vegetable broth and bring to a simmer.
  6. Add chopped spinach and dried dill.
  7. Stir well and reduce heat to low.
  8. Cover and cook for 18-20 minutes until rice is tender.
  9. Stir in lemon juice and season with salt and black pepper.
  10. Garnish with fresh parsley and serve warm.
