  • 1/2 cup basmati rice
  • 1/2 cup yellow lentils or split mung dal
  • 1 small onion chopped
  • 1 carrot diced
  • 2 tablespoons olive oil or ghee
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 4 cups water or vegetable broth
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley chopped (or cilantro)

Cooking Instructions
 

  1. Rinse rice and lentils thoroughly.
  2. Heat olive oil or ghee in a pot over medium heat.
  3. Add onion and cook until soft.
  4. Add carrot, turmeric, and cumin.
  5. Stir for 1 minute until fragrant.
  6. Add rice and lentils to the pot.
  7. Pour in water or vegetable broth.
  8. Bring to a boil, then reduce to a simmer.
  9. Cook for 30-35 minutes until soft and creamy.
  10. Garnish with fresh parsley or cilantro and serve.
