Veggie soup with potato, carrots, and peas is a simple, comforting vegetable soup made with everyday ingredients for nourishing home cooking.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 2 medium potatoes peeled and diced
  • 2 carrots sliced
  • 1 cup green peas fresh or frozen
  • 5-6 cups vegetable broth or water
  • 1 teaspoon dried thyme or oregano
  • Salt and black pepper to taste

Method
 

  1. Sauté the Base
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion and a pinch of salt. Cook 5-6 minutes, until soft.
  4. Add garlic and cook 30 seconds.
  5. Add Vegetables
  6. Stir in potatoes and carrots.
  7. Cook 2-3 minutes to coat with oil and flavor.
  8. Simmer
  9. Add broth, thyme, salt, and pepper.
  10. Bring to a boil, then reduce heat and simmer 20-25 minutes, until vegetables are tender.
  11. Add Peas
  12. Stir in peas and cook 5 minutes, until bright and tender.
  13. Finish & Serve
  14. Taste and adjust seasoning.
  15. Finish with herbs, lemon juice, or olive oil if desired.
