- Sauté the Base
- Heat olive oil in a large pot over medium heat.
- Add onion and a pinch of salt. Cook 5-6 minutes, until soft.
- Add garlic and cook 30 seconds.
- Add Vegetables
- Stir in potatoes and carrots.
- Cook 2-3 minutes to coat with oil and flavor.
- Simmer
- Add broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer 20-25 minutes, until vegetables are tender.
- Add Peas
- Stir in peas and cook 5 minutes, until bright and tender.
- Finish & Serve
- Taste and adjust seasoning.
- Finish with herbs, lemon juice, or olive oil if desired.
