  1. Preheat oven to 375°F.
  2. Cut tops off tomatoes and scoop out the centers.
  3. Bring vegetable broth to a boil.
  4. Stir in couscous, cover, and remove from heat.
  5. Let sit for 5 minutes, then fluff with a fork.
  6. Heat olive oil in a pan over medium heat.
  7. Add onion and cook until soft.
  8. Stir onion into couscous mixture.
  9. Add parsley, salt, and black pepper.
  10. Fill tomatoes with couscous mixture.
  11. Place in a baking dish and bake for 25-30 minutes.
  12. Serve warm to with pine nuts.
