- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery with a pinch of salt.
- Cook 6–8 minutes, until softened.
- Add garlic and cook 30 seconds.
- Add Split Peas
- Stir in rinsed split peas and bay leaf.
- Add broth or water.
- Bring to a boil, then reduce heat.
- Cover and simmer 45–60 minutes, stirring occasionally, until peas are very soft and soup thickens.
- Adjust Texture
- Mash gently with a spoon or blend partially if desired.
- Remove bay leaf.
- Season with salt and pepper.
- Finish with olive oil, parsley, or lemon juice if desired.
