- Heat oil in a large skillet or wok over medium-high heat.

Notes
• Chilled or day-old rice works best because it is drier and less likely to become soft or clump together while stir-frying.
• Have the vegetables and seasonings ready before you begin. Fried rice cooks quickly once the pan is hot.
• Sesame oil adds a deeper toasted flavor. If using it mainly for flavor, you can stir a small amount in near the end of cooking.
• For additional protein, add scrambled eggs or cooked tofu.
• Taste before adding extra salt, since soy sauce already adds saltiness.
