Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 bell pepper chopped
  • 1 carrot diced
  • 1 zucchini diced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 can 14.5 oz diced tomatoes
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 2 cups vegetable broth

Cooking Instructions
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook for 4-5 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add bell pepper, carrot, and zucchini. Cook for 5-6 minutes until softened.
  5. Stir in chili powder, cumin, smoked paprika, salt, and pepper.
  6. Add diced tomatoes, beans, and vegetable broth.
  7. Bring to a gentle boil, then reduce heat to low.
  8. Simmer uncovered for 30-35 minutes, stirring occasionally.
  9. Taste and adjust seasoning before serving.
