  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 can 15 oz white beans drained and rinsed
  • 1 can 15 oz diced tomatoes
  • 4 cups vegetable broth
  • 1 cup green beans chopped
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh basil chopped

Cooking Instructions
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and cook for 5 minutes until softened.
  3. Stir in garlic, salt, pepper, thyme, and oregano and cook for 30 seconds.
  4. Add white beans, diced tomatoes, and vegetable broth.
  5. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
  6. Add green beans and cook for 5 minutes.
  7. Stir in parsley and basil and remove from heat.
