Ingredients
  

  • 2 lbs sweet potatoes peeled and cubed
  • 2 tbsp butter or olive oil
  • ¼ cup milk or plant-based milk
  • Salt to taste
  • Black pepper to taste
  • ¼ tsp cinnamon or nutmeg Optional
  • 1 tbsp maple syrup or honey Optional
  • Fresh herbs thyme or parsley, Optional

Cooking Instructions
 

  1. Place sweet potatoes in a large pot and cover with water.
  2. Bring to a boil, then reduce heat and simmer for 18-20 minutes, until very tender.
  3. Drain well and return potatoes to the pot.
  4. Add butter or olive oil and mash until smooth.
  5. Stir in milk gradually until desired consistency is reached.
  6. Season with salt and black pepper.
  7. Add optional spices or sweetener if using.
  8. Serve warm.
