  • 1 onion chopped
  • 2 carrots grated
  • 2 beets peeled and grated
  • 2 cloves garlic minced
  • 1 potato diced
  • 2 cups cabbage shredded
  • 1 can 15 oz diced tomatoes
  • 5 cups vegetable broth
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh dill chopped

Cooking Instructions
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened.
  3. Stir in carrots and beets and cook for 5 minutes.
  4. Add garlic, potato, cabbage, diced tomatoes, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Stir in lemon juice, salt, and black pepper.
  7. Remove from heat and sprinkle with fresh dill before serving.
