Roasted cauliflower is a simple, flavorful dish made by roasting cauliflower with olive oil and seasoning until tender and lightly caramelized.

Ingredients
  

  • 1 large head cauliflower cut into florets
  • 2 –3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional Flavor Add-Ins
  • ½ teaspoon paprika or smoked paprika
  • ½ teaspoon cumin or garlic powder
  • Lemon wedges for serving
  • Fresh herbs parsley or cilantro

Method
 

  1. Preheat the Oven
  2. Preheat oven to 425°F (220°C).
  3. Line a baking sheet with parchment paper if desired.
  4. Season the Cauliflower
  5. Place cauliflower florets in a large bowl.
  6. Drizzle with olive oil, salt, and pepper.
  7. Toss well until evenly coated.
  8. Roast
  9. Spread florets in a single layer on the baking sheet.
  10. Roast for 25–30 minutes, flipping once halfway through, until golden brown and tender with crisp edges.
  11. Finish & Serve
  12. Remove from oven.
  13. Finish with a squeeze of lemon or a sprinkle of herbs if desired.
  14. Serve hot or warm.

Notes

Extra crispy: don’t overcrowd the pan
Spiced version: add cumin, paprika, or chili flakes
Meal prep: keeps 3–4 days in the fridge
Serve with: tahini sauce, hummus, or over grain bowls
