Cooking Instructions
 

  1. Bring water or vegetable broth to a boil in a saucepan.
  2. Add quinoa, reduce heat, cover, and simmer for 12–15 minutes until liquid is absorbed.
  3. Remove from heat and fluff quinoa with a fork.
  4. While quinoa is warm, stir in olive oil, lemon juice, garlic (if using), salt, and pepper.
  5. Fold in chopped kale and toss gently until slightly wilted.
  6. Taste and adjust seasoning before serving.
