  • 1 cup chickpea flour besan
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp turmeric
  • ¼ tsp chili powder optional
  • Salt to taste
  • ¾ cup water as needed
  • Vegetables choose 2-3
  • 1 small onion thinly sliced
  • 1 small potato thinly sliced
  • ½ cup cauliflower florets
  • ½ cup spinach leaves
  • Oil for shallow or deep frying

Cooking Instructions
 

  1. In a bowl, whisk chickpea flour, cumin, coriander, turmeric, chili powder, and salt.
  2. Gradually add water, mixing until a thick, smooth batter forms.
  3. Add vegetables to the batter and toss until well coated.
  4. Heat oil in a skillet or pot over medium heat.
  5. Drop spoonfuls of the mixture into hot oil.
  6. Fry for 3-4 minutes per side, until golden and crisp.
  7. Remove and drain briefly on paper towels.
  8. Serve hot.
