Onion soup is a comforting vegetable-based soup made by slowly caramelizing onions and simmering them in broth for rich, savory flavor.

Ingredients
  

  • 3 large onions thinly sliced
  • 2 tablespoons olive oil or olive oil + butter
  • 1 garlic clove minced
  • 1 teaspoon thyme fresh or dried
  • 5 cups vegetable broth
  • Salt and black pepper to taste
  • Optional Finish
  • Toasted bread
  • Cheese or plant-based cheese
  • Fresh parsley

Method
 

  1. Caramelize the Onions
  2. Heat olive oil in a large pot over medium-low heat.
  3. Add onions and a pinch of salt.
  4. Cook slowly, stirring often, 25-30 minutes, until soft, golden, and sweet.
  5. Add Garlic & Herbs
  6. Stir in garlic and thyme.
  7. Cook 30 seconds until fragrant.
  8. Simmer
  9. Add vegetable broth and black pepper.
  10. Bring to a gentle simmer and cook 15-20 minutes.
  11. Adjust salt and pepper as needed.
  12. Serve hot, with toasted bread or cheese on top if desired.

Notes

Deeper flavor: deglaze the pot with a splash of water or vinegar
Creamy version: blend a portion of the soup
Grow-it-yourself: onions are one of the easiest vegetables to grow and store
Meal prep: keeps well 3-4 days and improves with time
