- Caramelize the Onions

- Add onions and a pinch of salt.
- Cook slowly, stirring often, 25-30 minutes, until soft, golden, and sweet.
- Add Garlic & Herbs
- Stir in garlic and thyme.
- Cook 30 seconds until fragrant.
- Simmer
- Add vegetable broth and black pepper.
- Bring to a gentle simmer and cook 15-20 minutes.
- Adjust salt and pepper as needed.
- Serve hot, with toasted bread or cheese on top if desired.

Deeper flavor: deglaze the pot with a splash of water or vinegar
