Cooking Instructions
 

  1. Heat olive oil in a wide pan over medium heat.
  2. Add onion and cook for 5-6 minutes until soft and lightly golden.
  3. Add garlic and ginger; cook for 30 seconds until fragrant.
  4. Stir in okra and cook for 6-8 minutes, stirring occasionally, until lightly browned and less sticky.
  5. Add crushed tomatoes, tomato paste, cumin, coriander, turmeric, paprika, and salt.
  6. Stir well and add a little water if needed to loosen the sauce.
  7. Reduce heat to low, cover, and simmer for 12-15 minutes, until okra is tender.
  8. Taste and adjust seasoning. Garnish with cilantro if using and serve warm.

Notes

Make sure okra is completely dry before cooking to reduce sliminess
