- Heat olive oil in a wide pan over medium heat.
- Add onion and cook for 5-6 minutes until soft and lightly golden.
- Add garlic and ginger; cook for 30 seconds until fragrant.
- Stir in okra and cook for 6-8 minutes, stirring occasionally, until lightly browned and less sticky.
- Add crushed tomatoes, tomato paste, cumin, coriander, turmeric, paprika, and salt.
- Stir well and add a little water if needed to loosen the sauce.
- Reduce heat to low, cover, and simmer for 12-15 minutes, until okra is tender.
- Taste and adjust seasoning. Garnish with cilantro if using and serve warm.
