  • 1 cup breadcrumbs
  • 1 carrot grated
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 eggs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley chopped

Cooking Instructions
 

  1. Preheat oven to 375°F and lightly grease a loaf pan.
  2. Heat olive oil in a pan over medium heat.
  3. Add onion and cook until softened.
  4. Stir in garlic and grated carrot and cook for 2 minutes.
  5. In a large bowl, combine cooked lentils, breadcrumbs, sautéed vegetables, eggs, salt, black pepper, thyme, and parsley.
  6. Mix until evenly combined.
  7. Press mixture firmly into the prepared loaf pan.
  8. Bake for 45 to 50 minutes until firm and lightly golden.
  9. Let rest before slicing and serving.
