Ingredients
  

  • 1 cup French green lentils Puy lentils, rinsed
  • 3 cups water
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • ½ cup carrots finely diced
  • ¼ cup red onion finely chopped
  • cup goat cheese crumbled
  • ¼ cup toasted walnuts or almonds chopped
  • 2 tbsp fresh parsley or chives chopped

Cooking Instructions
 

  1. Bring lentils and water to a boil. Reduce heat and simmer for 20-25 minutes, until tender but firm. Drain and cool slightly.
  2. In a large bowl, combine lentils, cucumber, tomatoes, carrots, red onion, and herbs.
  3. Whisk dressing ingredients in a small bowl.
  4. Pour dressing over salad and toss gently.
  5. Fold in goat cheese and nuts just before serving.
  6. Serve at room temperature or chilled.
