- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Arrange eggplant slices on the baking sheet. Brush both sides with olive oil and season with salt and black pepper.
- Roast for 20-25 minutes, flipping halfway, until tender and lightly golden.
- During the last 5 minutes, place cheese slices on top of eggplant and return to oven until melted.
- Lightly toast burger buns if desired.
- Spread pesto on the cut sides of the buns.
- Assemble burgers with cheesy eggplant slices and optional toppings.
- Serve warm.
