  2. Add onion and cook for 5-6 minutes until soft and lightly golden.
  3. Add garlic and ginger; cook for 30 seconds until fragrant.
  4. Stir in cumin, coriander, garam masala, paprika, and turmeric. Cook briefly until aromatic.
  5. Add crushed tomatoes and tomato paste. Simmer for 8-10 minutes until thickened.
  6. Stir in chickpeas and enough water to create a sauce.
  7. Season with salt and simmer for 10-12 minutes, allowing flavors to blend.
  8. Taste and adjust seasoning. Garnish with cilantro if using and serve warm.
