Ingredients
  

  • cups arborio rice
  • 2 tbsp olive oil or butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 cups butternut squash peeled and diced small
  • 4–5 cups warm vegetable broth
  • ½ cup dry white wine optional
  • ½ tsp dried thyme or sage
  • Salt to taste
  • Black pepper to taste
  • ½ cup grated Parmesan optional

Cooking Instructions
 

  1. Heat vegetable broth in a saucepan and keep warm over low heat.
  2. Heat olive oil or butter in a large pan over medium heat.
  3. Add onion and cook for 4-5 minutes until soft.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in butternut squash and cook for 4-5 minutes.
  6. Add arborio rice and stir for 1-2 minutes to coat the grains.
  7. Pour in white wine if using and cook until absorbed.
  8. Begin adding warm broth, one ladle at a time, stirring often.
  9. Allow liquid to absorb before adding more broth.
  10. Continue for 25-30 minutes, until rice is creamy and tender.
  11. Season with thyme, salt, and pepper.
  12. Stir in Parmesan if using. Remove from heat and serve warm.
