  • 2 cups Brussels sprouts halved
  • 3 tbsp olive oil divided
  • Salt to taste
  • Black pepper to taste
  • cup walnuts lightly crushed

Cooking Instructions
 

  1. Bring brown rice and water (or broth) to a boil.
  2. Reduce heat, cover, and simmer for 30–35 minutes, until tender. Fluff and set aside.
  3. Preheat oven to 425°F (220°C).
  4. Toss Brussels sprouts with 2 tbsp olive oil, salt, and black pepper.
  5. Roast for 20-25 minutes, until tender and lightly browned.
  6. In a serving bowl, combine cooked brown rice and roasted Brussels sprouts.
  7. Drizzle with remaining olive oil and toss gently.
  8. Finish with crushed walnuts and extra black pepper if desired. Serve warm.
