Cooking Instructions
 

  1. Preheat oven to 400°F (200°C).
  2. Score the flesh of the eggplants and brush with olive oil.
  3. Season with salt and black pepper.
  4. Place eggplants cut-side up on a baking sheet.
  5. Bake for 25 minutes until the flesh is tender.
