  • 2 large sweet potatoes halved lengthwise
  • 1 cup wild rice
  • 2 cups water
  • 1 carrot finely diced
  • 1 small onion finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Cooking Instructions
 

  1. Preheat oven to 400°F.
  2. Place sweet potato halves cut-side up on a baking sheet and brush with 1 tablespoon olive oil.
  3. Bake for 40 to 45 minutes until tender.
  4. While potatoes bake, combine wild rice and water in a pot and bring to a boil.
  5. Reduce heat, cover, and simmer for 35 to 40 minutes until rice is tender.
  6. In a pan, heat remaining olive oil and sauté carrot and onion until softened.
  7. Stir cooked wild rice into the sautéed vegetables and season with salt and black pepper.
  8. Remove sweet potatoes from oven and scoop out a small portion of the center flesh.
  9. Fill each sweet potato half with the wild rice mixture.
  10. Sprinkle parsley over the top before serving.
