Ingredients
  

  • 2 lb ripe tomatoes chopped
  • 1 small cucumber peeled and chopped
  • 1 small green bell pepper chopped
  • 1 small garlic clove
  • ¼ cup extra-virgin olive oil
  • 2 tbsp sherry vinegar or red wine vinegar
  • Salt to taste
  • 1 cup cold water as needed
  • Optional Traditional Additions
  • Small piece of day-old bread soaked and squeezed
  • Diced cucumber or croutons for topping

Cooking Instructions
 

  1. Add tomatoes, cucumber, bell pepper, and garlic to a blender.
  2. Blend until smooth.
  3. With the blender running, drizzle in olive oil until emulsified.
  4. Add vinegar, salt, and cold water to reach desired consistency.
  5. Taste and adjust seasoning.
  6. Chill for at least 30 minutes before serving.
  7. Serve cold, with optional toppings if desired.
