  1. Preheat oven to 400°F (205°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper. Roast for 20 minutes until tender.
  3. Transfer roasted sweet potatoes to a bowl and mix with black beans, onion, cumin, and chili powder.
  4. Spread a thin layer of enchilada sauce in a baking dish.
  5. Fill tortillas with sweet potato mixture and roll tightly.
  6. Place seam-side down in the dish.
  7. Pour remaining enchilada sauce over the top and sprinkle with cheese.
