  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 2 cans 15 oz each black beans drained and rinsed
  • 1 can 28 oz diced tomatoes
  • cups vegetable broth or water
  • tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • Salt to taste
  • Black pepper to taste
  • Toppings
  • Shredded cheddar cheese
  • Sliced green onions

Cooking Instructions
 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and bell peppers; cook for 6-7 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in black beans, diced tomatoes, broth, cumin, chili powder, smoked paprika, salt, and pepper.
  5. Bring to a gentle boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning.
