- Peel onions and cut off the top third. Scoop out the center layers, leaving a sturdy shell.
- Brush onions with olive oil and season with salt and pepper.
- Place onions in a baking dish, cut-side up.
- In a bowl, mix grated cheese, Parmesan, herbs, and garlic if using.
- Fill each onion generously with the cheese mixture.
- Sprinkle breadcrumbs on top if using.
- Cover loosely with foil and bake for 30 minutes.
