  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  2. In a bowl, whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, whisk sugar, eggs, oil (or butter), pumpkin purée, and vanilla until smooth.
  4. Fold dry ingredients into wet ingredients just until combined.
  5. Stir in optional add-ins if using.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 55-60 minutes, until a toothpick inserted comes out clean.
  8. Cool completely before slicing.

Do not overmix to keep loaf tender
