Ingredients
  

  • 2 cups green beans trimmed and cut in halves
  • cups corn kernels fresh, frozen, or canned and drained
  • 2 tbsp olive oil
  • tbsp fresh lime juice
  • Lime zest optional
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp fresh cilantro or parsley chopped (optional)

Cooking Instructions
 

  1. Bring a pot of salted water to a boil.
  2. Blanch green beans for 2-3 minutes until tender-crisp. Drain and cool.
  3. In a bowl, combine green beans and corn.
  4. Whisk olive oil, lime juice, salt, and black pepper.
  5. Pour dressing over vegetables and toss gently.
  6. Finish with lime zest and herbs if using. Serve chilled or at room temperature.
