  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 can 28 oz crushed tomatoes or whole tomatoes
  • 3 cups vegetable broth
  • ½ tsp sugar optional, to balance acidity
  • Salt to taste
  • Black pepper to taste
  • ½ cup fresh basil leaves
  • ¼ cup cream or plant-based cream optional

Cooking Instructions
 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook for 4-5 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in tomatoes, vegetable broth, sugar (if using), salt, and pepper.
  5. Bring to a gentle boil, then reduce heat and simmer for 20-25 minutes.
  6. Add fresh basil and remove from heat.
  7. Blend until smooth using an immersion blender or blender.
  8. Stir in cream if using and warm gently before serving.
